Our Story
Prem Meats was initially founded in the late 1800’s by Michael Prem in a small village in Germany. In 1921, Michael’s son, Joseph, immigrated to the United States, bringing along with him the recipes and craft that we pride ourselves on today. Decades later, Joseph’s son, Bill, wanted to carry along this family tradition of sausage-making by opening the newest edition of Prem Meats in Spring Green, Wisconsin. Bill opened his shop with the goal to process 100 deer per season. In the late 1980’s, Bill was asked to cater a summer party for a local business, sparking the catering venture of Prem Meats. New beginnings and record numbers came in 1999, as the shop garnered 1700 deer that season along with huge advancements in the smoking and processing stages of the meat. Bill and his wife, Sandy, were able to retire from their other jobs and work at their shop full-time. Upon their retirement, they sold the business to their sons, Marty and Terry, in 2010. In 2012, Marty and Terry began opening a new shop exploring the future of the business. At the end of 2012, they had surpassed their 3- year projection set earlier that year, and by 2016, Prem’s added a new sausage line to their process as well as adding more full-time employees. Their exploration brought more than just meat but led to the development of the only mobile slaughtering business in the state of Wisconsin along with the sales of bread, desserts, dips, heat & eat items and more! By July 1, 2021, Marty and Terry opened the Prairie du Sac location allowing for 32 full-time staff members across both locations. The next generation of the Prem family is now helping, as Gavyn is the General Manager of the Prairie du Sac store.

Beginning July 21, 2025 we’re making an important upgrade that brings more opportunity and assurance to our community and beyond.
Both of our Prem Meats processing plants and our Natural Harvest Truck will be officially transitioning to Federal Inspection status. This higher level of inspection ensures that we meet rigorous USDA standards, and more importantly, it unlocks exciting new possibilities for us and our customers.

Wonderful meat market. Great selection and superb service. Family run and it shows.
Good meats, good place for fresh premade burgers for the grill. Saves a lot of work. I like the fresh pretzel hotdog and hamburger buns they have. They also make good macaroni salad, potato salad, egg salad and have fresh made sandwiches. My favorite thing they have is stuffed pork chops and stuffed chicken breasts. Definitely recommend this place.
